Cooking: Tex Mex Bowl
I'm a fiend for spicy foods, especially anything with a sriracha or spicy taco vibe. As you can imagine, it can be difficult to mix things up when you're adding the same or similar spices to every meal. Well, the latest recipe I'm obsessing over is the Tex Mex Bowl.

It's basically a Texas dump bowl with a Mexican vibe. What is a dump bowl you ask? A pan or bowl of just stuff. You throw everything in together and let it cook into tasty goodness. This recipe is super simple and fairly healthy. Keep reading for the full recipe.

Prep Time: 5 minutes
Cook Time: 20 Minutes
Total Time: 25 Minutes
Serves: 3-4
Ingredients:
16 oz. Chicken
2 Whole Zucchini
1 Red Bell Pepper
1 Large Onion
1 Can Corn
1 Can Black Beans
1 Can Diced Tomatoes
Taco Seasoning (use Trader Joe's brand if you can)
1 tbsp. Olive Oil
Instructions:
1. Prep and wash the veggies and chicken. Chicken should be cut into 1" cubes and veggies cut into bite sized pieces. Set aside.
2. Heat olive oil in a large pan or wok on medium heat.
3. Add in the chicken and cook for 4-6 minutes. Add in the zucchini, bell peppers and onion. Let it continue cooking for 6-8 minutes.
4. Dump in the corn, beans and diced tomatoes. Stir in the taco seasoning and cayenne to taste.
5. Serve and enjoy!
